Mesa Verde chef Jacob Green is teaming with Damien Neylon (Parcs, Brae) to produce a zero-waste, max-delicious dinner. The pair will present an eight-course degustation, with each course to feature a different cut of the same beast, supported by produce grown on-site and ferments made using waste from Mesa Verde's bar and kitchen, Rooftop.
