Chefs Michael Flemming (Copycat) and Chris Polak (Polly’s) share the ingredients they grew up with along the Murray River and the Far North Coast of NSW. Flemming will be cooking a nonna-inspired farm-to-table offering, focussing on ingredients from the land. Polak’s food, meanwhile, is influenced by time spent outdoors, with a strong focus on fishing, collecting and diving. Expect spicy subtropical flavours and plenty of seafood. To complement the multi-course dinner, sommelier Jake Deans will pour wines in an optional pairing featuring coastal Australian, Corsican, and cult Italian seaside classics.
