Anaïs Ca Dao van Manen has been around the block – she's cooked at Bones in Paris and at wine mecca Auberge de Chassignolles in the Auvergne, and at Trullo and the Clapton branch of P. Franco in London. But there’s more to her story than wine bars and Mediterranean and French food, not least the role she took in the development and opening of Bao in Borough Market and King’s Cross, as well as Bao’s pandemic-pivot success story Rice Error.
Now she lives in Ho Chi Minh City, where she runs Yeshi Taiwanese Kitchen, and as we welcome her to Melbourne to cook with her friends at Brico, Phaidon books is about to publish her first title, Vietnam: The Cookbook. Join her this Festival for a unique celebration of her twin passions for Vietnamese food and honest, well-sourced wines as she collaborates with Brico’s Simon Ball-Smith to create Vietnamese-French bistro dishes you're going to love.
