This Festival, Amaru hosts Hiroyasu Kawate, chef of Tokyo’s two-Michelin-starred Florilège, for two exclusive dinners. This event will bring together two distinct culinary approaches, blending Florilège’s French-Japanese techniques with Amaru’s Australian-accented contemporary fine dining.

Chef Kawate and Amaru’s Clinton McIver will collaborate on a multi-course menu designed to showcase their shared commitment to innovation, sustainability, and quality. The dishes will combine elements from both chefs’ repertoires, highlighting seasonal produce and the unique essence of their respective cuisines.

Florilège ranked #2 on Asia’s 50 Best in and #21 on the World’s 50 Best list in 2024, while Amaru is the proud holder of three hats in the latest edition of the Good Food Guide, and this is the coming together of two restaurants at the peak of their respective restaurant communities, and a taste of Azabudai in the heart of Armadale.

Beyond the accolades, both share a united culinary ethos centred on creative tasting menus, celebrating locally sourced ingredients. Over the course of dinner, Amaru and Florilège will collaborate on a tasting menu. Conversations and interactions among diners and the front-of-house teams is encouraged, as each dish will be presented with insights into the ingredients, creating an engaging and immersive dining experience.
