London’s most talked-about restaurant makes landfall in Melbourne this March as Tomos Parry steps into the kitchen at Cutler to give Australia an exclusive taste of the fire-driven cooking that has made his restaurants Brat and Mountain a bonafide sensation.
Parry, a Welsh chef with a passion for the food traditions of the Balearic Islands and the Basque Country, caused a sensation when he opened Brat in Shoreditch in 2018, with London diners falling hard for his fire-driven cooking. It’s a buzz that has grown to a roar with the subsequent openings of Brat x Climpson’s Arch in Hackney, and Mountain, a wine bar in Soho.
Reviewing Mountain in The Guardian, critic Grace Dent wrote "This is why we put on shoes and go out to eat", adding, “every new Tomos Parry restaurant creates a gasping hubbub that you cannot manufacture or pay for.”
Now, that gasping hubbub comes to Melbourne, and whether you’re a fan looking to rekindle memories of great Brat and Mountain meals past, or eager to try Parry’s food for the first time, it’s going to be a sensational couple of days at Cutler.
Parry is also pumped. “I’m excited to create a menu that really celebrates the stunning autumn produce Melbourne has to offer, cooking over fire as we do at Brat and Mountain,” he says. “At the moment, I’m thinking of dishes like our braised lobster from Mountain, but with the local shellfish, sweetbreads with leeks, and wood-roasted game birds. But this will no doubt evolve once we get our hands on the local ingredients and see what’s available."
