Havana comes to Collingwood this March as Commis goes Cuban. Enjoy a four-course feast inspired by classic Cuban cuisine featuring bold, authentic dishes that will transport you straight to the heart of Havana. Dishes on chef Gabriel de Melo Freire's mood-board for the event include pan con lechón ("the OG Cuban sandwich, a bit different to the one we all know"), Cuban tamales filled with beef, chatino ("like Cuba's version of plantain tostones"), the Cuban prawn dish enchilado de camarones, a classic ropa vieja with rice, beans and yucca chips - all the good stuff.
The exact menu is still a work in progress and will also depend on what's looking good in the markets that week, but rest assured that it'll be a Latin feast that you'll love. "And we'll definitely have great Cuban music playing on vinyl, and we'll definitely be mixing up classic Cuban cocktails," says de Melo Freire. "Viva Cuba!"
