What makes Victoria great? Ten Minutes by Tractor is going to show diners, with a tasting menu devoted to its people, produce and wine. Each course is designed by a different chef, showcasing a signature Victorian ingredient, as well as paying tribute to their cultural backgrounds. The celebrated winery-restaurant’s sommeliers have also joined in, partnering with renowned producers to pair each course with a delicious wine from the region, highlighting the diverse terroirs of Victoria.

“We have a range of cultural backgrounds in the kitchen spanning from Australia to England, also including New Zealand, Japan, South Korea and India - each chef will be given a Victorian ingredient to hero and be asked to use their heritage as inspiration towards a creative degustation menu.

"All of our chefs have a deep passion for haute-cuisine, playing with different techniques and flavour combinations, and trying to be as sustainable and seasonal as possible. This is further empowered through chef Hayden Ellis's leadership and extensive fine-dining experience, along with the initiatives in place at TMBT like the regenerative farm and close-relationships with local producers. Our menu should represent the idea that the quality of Victorian hospitality mirrors the quality of Victorian produce, allowing for chefs andstaff of all backgrounds to find their place that will allow them to fully flourish and grow.”
